Veal Milanese over Creamy Arborio Rice and Sauteed Spinach.

Barbara Esmonde, chef/owner of Barbara’s on the Bay of Betterton, debuts her version of Veal Milanese (Cotoletta alla Milanese). Esmonde serves the veal over Creamy Arborio Rice and Sauteed Spinach. This is another powerful addition to her carryout and home delivery menu.

“I prepare it in the traditional way. The veal is breaded then fried in butter to a tasty, crispy finish,” Esmonde described.

Cotoletta alla Milanese is a dish in the culinary tradition of the Lombardy region. The addition of the creamy arborio rice strengths the Lombardy theme. The spinach is a great compliment.

Consider pairing the entrée’ with a white such as a Chardonnay or a Riesling, or a red such as a Merlot. Barbara’s Buggy is delivering to Rock Hall on Wednesday-Friday at 6:00 p.m. and to Chestertown at Todd’s Body Shop, Wed-Saturday, 5:30 p.m. to 7:00 p.m.
